Red Lentil Soup
Red lentil soup is the easiest and the most delicious soup I use to make with few ingredients in a short time. It always saves the day, so keep it in mind! You can add your favorite vegetables too, it turns out great. Let’s move on to the recipe!
- 1 medium onion
- 1 medium carrot
- 1 medium potato
- 1 garlic clove
- 1 teaspoon pepper paste
- 1.5 cups yellow or red lentils
- 6 cups water
- 1 cup chicken broth
- 1 tablespoon butter
- 2 tablespoons olive oil
- Salt/black pepper
- @datçakoybaharatları spice mix
- Dried red pepper flakes / Dried mint
First, peel and roughly chop the onion, carrot, garlic, and potato. In a deep stainless steel pot, add 2 tablespoons of olive oil and heat it up. Once the oil is hot, add the chopped vegetables and start sautéing them. While the vegetables are sautéing, add 1.5 cups of well-washed lentils and 1 teaspoon of pepper paste to the vegetables, stir until the vegetables change color. Once the vegetables are lightly sautéed and softened in their own juice, add the chicken broth and water. Then add salt, black pepper, and the mixed spices I got from @datçaköyürünleri. Let it cook for 15 minutes and then lower the heat. As the lentils cook, they break down, and the vegetables become very soft. Blend the soup with a blender until it gets smooth. In a small pan, melt 2 tablespoons of butter, add red pepper flakes and mint, sauté them, and then pour this buttery mixture into the soup. It will smell amazing!
Enjoy your meal 🙂
So, how do you make lentil soup at your house?
Note:
- For a thicker soup, you can add 1 tablespoon of flour in the first step.
- For a more liquid soup, you can increase the amount of water. Enjoy! 🙂
